Pancake day
Our Belgian pancake day always falls on February 2nd, together with Candlemas, on the one hand, one can say I’m a bit late with this blog. On the other hand, USA national pancake day is only March 1st, so I’m still on time.
The tradition of pancakes on Candlemas stems from a special kind of biscuits eaten on February 2nd when farmhands were hired for jobs (they could only change jobs or be hired on 2 dates in the year, February 2nd or November 11th). Later these biscuits evolved into pancakes, which with their round form and yellow color resemble the sun and symbolize the lengthening of the days. It is said that eating pancakes on Candlemas would bring you a rich and happy year.
When I was still following the WW program I found a recipe that made about 10 crepes and came at about 1 point per piece. But I forgot to save it, the ingredients were flour, Candarel sugar, eggs, almond milk, and sparkling water. Unfortunately, I don’t have the link or exact measurements anymore. Hence, these days I make a very easy pancake batter with a meal replacement powder. This time I combined one scoop of Vanilla with one scoop of Strawberry flavor. For the blog, I wanted to make Insta-worthy pancakes, but unfortunately, they didn’t turn out so pretty. But they were tasty and filling.
I eat these pancakes without any toppings. Also when I used to buy premade pancakes or crepes I just ate them plain. If my dad makes them I use sugar or syrup.
But a favorite topping seems to be Nutella, which brings me to World Nutella day tomorrow.

In the past Nutella paste was something I could binge on with half a loaf of bread or a packet of wraps. However, now I don’t buy it anymore that often as the pot is just too big for one and I have enough of the smaller glasses. Also, I don’t fancy the taste anymore. From time to time I still purchase the Nutella & go for a small dose. A weird combo, for some, that I picked up at a summer camp when I was 10 are sandwiches with cheese and Nutella.
